I'm not a big fan of olives, though I wish I was since they contain a lot of healthy fat. Other than that this recipe looks great. I might replace the lemon juice with lime juice.

Ok, howsabout a couple of tips that are aimed more directly at taco fillings?
Yeast pastes like Vegemite, Marmite and Promite all have a meatish taste that works really well with either refrito (refried beans) or veggie 'meat' taco fillings. It doesn't take a lot, maybe 1/4th teaspoon to cup of filling. Marmite added to beans convinces non-vegs that you've put pork into them.
Another really good thing to use in taco fillings is torula yeast. Torula yeast is a major part of the flavor of Bar-B-Que potato chips! It has a smokey, bacony type taste and really will make people think you've got bacon in your filling. It's hard to find so here's a link to one place you can get it from:

I've got a 'secret' ingredient that gets used in most everything and not just tacos.
It's an accidentally vegan-friendly buttery flavored salt called Flavacol. You can buy it on the web, but the smallest container available is a quart (like what soymilk comes in). But luckily it's what most movie theaters use on their popcorn and they'll usually sell or give you some of it if you ask nicely! Just be sure that they use Flavacol since some use buttery salt thats got real butter in it.
Just use the Flavacol to replace plain salt in all your recipes. Works wonders in baked goods, uncheesey sauces and soups. It WON'T make things taste like popcorn when it's cooked.
