What is the best, most healthy type of vegetarian sushi?

Hi everyone! I’m a vegetarian but I want to try sushi because a lot of my friends like sushi and I want to be able to go out to lunch with them when they are in the mood for sushi. I’ve tried a couple of different vegetable tempura sushis (yam, for example) but I’ve recently heard tempura sushi rolls are the most fattening/high calorie. What sushi would you recommend for a vegetarian who wants to watch her calorie intake but likes the taste of vegetable tempura?

    I make cucumber, avocado, blanched spinach, pickled veg like Daikon, Kimchi, and there either the Maki rolls or the smaller Nigiri style, any veg is fine, wrapped in seaweed or not.

    I buy sushi that is made with brown rice and filled with avocado, cucumber, and some ginger.

    Tempura is definitely not healthy; it’s deep fried vegetables! Yuck!

    There are a lot of better veggie options. I always stick to the house veggie roll (ask to make sure they don’t contain fish or roe), and cucumber rolls. And definitely try goma-ae (steamed spinach with miso sesame sauce or peanut sauce).
