Hi, try a veggie cottage pie, fry onions, mushrooms, bell peppers, courgettes, add a tin of tomatoes and red kidney beans, make up a small cup of veggie gravy and add. cook potatoes until soft, mash with butter, salt and pepper. Put veggie mix in dish, spread mashed potato over top, add cheese if you wish and put in oven for 20 minutes. Easy to freeze as well.

Give us some more detail, what kind of food do you like/dislike? Do you like the meat replacement products, if so there are an endless amount of quick, easy recipes for us ‘cooking challenged’. Here is an easy, cheap meal I make with Boca Grounds: 2 bags of Boca grounds (three come per box), 1 finely chopped onion, 1 family size can of Sloppy Joe mix (I use Manwich). Mix these ingredients together, throw them on some hamburger buns and…you have vegetarian sloppy Joe’s. (My non-vegetarian husband will even eat these, try it)!
