I need some vegetarian meal ideas that I can cook from work.?

I have been eating mostly veggie burgers, raw fruits and veggies. Im not a vegetarian but I like to eat that way during the day so I can eat a normal dinner with my boyfriend at home. I only have a microwave at work to cook with. Any ideas will help. Thanks!

    There are lots of vegetarian frozen lunches offered at most groceries stores that are healthy and microwavable. I think Annies organic is one of the better ones, though I’m not sure on the name. They can be a little pricey but it’s an option for maybe once of twice a week.

    I eat a lot of oatmeal at work – mix some dried cranberries or blueberries for flavor. Add some nuts (I like almonds the best) for protein. Top it off with a hot cup of green tea and you’ve got a healthy meal.

    Amy’s makes some good microwavable frozen meals, including enchiladas, lasagna, and “meals in a bowl.” Available in the freezer section of most large grocery stores, Whole Foods, and other health food markets.

    There is a great frozen meal company called Amy’s Organics.
    They have AMAZING vegetarian/vegan dishes. My favorite are the pot pies, pockets, bowls.

    Also sometimes simple meals like sandwiches are easy and delicious for work. It’s very easy to make a soy-nut-butter and jelly sandwich or a faux meat and cheese sandwich.

    If you have a lighter appetite, bringing some veggie sticks along with some hummus, baba ganoush, or other dip, is a great way to get your veggie servings for the day.

    Meatless chili, falafel with hummus, whole wheat pasta with tomato sauce and crumbled veggieburger or “faux” meat balls.
