what is a good vegetarian wow for holiday menus?

I need the hit item on the holiday menus this year to be a vegetarian one. it does not have to be vegan. i just want to have a specatacular main dish instead of a collection of side items. thanks

    you can make like a super veggie casserole
    a yummy meatless stuffing with a different “kind of meat” thing, like meaty mushrooms or tofu

    My daughter and sister-in-law are semi-vegetarians….they will eat a sliver of turkey, and everything else is veggie!

    My grandmother taught me an awesome broccolit casserole..its the only way to get kids to eat broccoli! Buy broccoli crowns, break or cut them into bite sized pieces…enough to fill a baking dish..steam them for about 10-15 minutes so that they’re parcially cooked, but still crisp. Drain and set aside, two or three cans of cream of mushroom soup (depending on the size of the casserole you want), 1 or 1 1/2 cups of grated cheddar cheese. Mix together the broccoli, soup, and cheese, add some black pepper…about 1/2 a tablespoon..mix well to coat everything with the soup. Put into your baking dish. Then you need two cups of saltine crackers crushed, mixed with a melted cube of butter…spread the crumb/butter mixture on top of the broccoli…bake at 325 degrees for about 25 minutes…..yummy….my kids have loved this since before they could talk!!
